This is my tenth cookie of the tour and my family, and I were a little over-cookied at this point, so I sent these to school with my daughter for one of her book club meetings. The kids loved them. Or maybe 6th graders will eat anything with sugar and chocolate in it.
Andes Mint Chocolate Cookies
Ingredients:
2C flour
1/4 C cocoa powder
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
8 oz chocolate chips
2 eggs
1 tsp vanilla
5 TBS butter, softened
3/4 C brown sugar
1/4 C sugar
1 package Andes Creme de Menthe Bits
Directions:
1. Preheat oven 350.
2. Mix flour, cocoa, baking powder, baking soda, and salt in a small bowl.
3. Melt chocolate chips in microwave.
4. Cream the butter and sugars in a large bowl. Add eggs and vanilla until blended. Then add melted chocolate until blended.
5. Add the dry ingredients. Then fold
6. Chill dough for 30 minutes.
7. Bake for 10 minutes. Cool for 5 before transferring to wire rack.
