My family loves Girl Scout Thin Mint cookies, but you can only get them four months each year. Solution: We made our own. They aren't quite as thin, but they're still yummy.
Thin(ish) Mint Cookies
Ingredients:
1 box chocolate cake mix
3 TBS shortening, melted
1/2 C flour (plus extra if needed)
1 egg
3 TBS water
1/2 tsp peppermint extract
and...
12 oz chocolate chips
1/2 tsp peppermint extract
4 TBS shortening
Directions:
1. Combine first 6 ingredients into a dough. Form into two 1" logs.
2. Wrap logs in wax paper and freeze for an hour.
3. Preheat oven to 375.
4. Slice cookies about 1/4" thick. Place on lined cookie sheet.
5. Bake 13-15 minutes.
6. Cool completely.
7. Microwave last 3 ingredients (50% power) until melted. Dip wafers into melted chocolate using a fork. Dry on wax paper.
Hints & Help:
I added about an extra 1/4 C of flour because the dough was too sticky.
