DEAR SANTASAURUS Blog Tour - Lemon Butter Cookie

The tour is going strong even as the weather is freezing here in NC.

These cookies look like fried eggs to me. They taste better than they look. The texture is soft and almost cake like.

Lemon Butter Cookies

Ingredients:
3 C flour
2 tsp baking powder
3/4 tsp salt
1 C butter, softened
1 1/2 C sugar
4 TBS lemon juice
2 eggs
1/2 tsp vanilla
For topping....
2 C powdered sugar
1/2 tsp vanilla
1 1/2 TBS lemon juice
 & yellow food coloring
 
Directions:
1. Preheat oven to 375. Line cookie sheet with non-stick foil.
2. Combine flour, baking powder, and salt in a bowl.
3. Mix butter, sugar, and lemon juice with electric mixer. Add eggs one at a time and then the vanilla.
4. Slowly add the flour mixture.
5. Shape into 1" balls and place on cookie sheet. (Roll in sugar if desired.)
6. Bake 9 - 11 minutes. Cool completely.
7. Mix topping ingredients until smooth. Place in Ziploc bag, cut corner, pipe onto cooled cookies.
