DEAR SANTASAURUS Blog Tour - Chocolate Dunked Shortbread

Happy December! It's Day 3 of the Dear Santasaurus Blog Tour.


This is one my favorite cookies. My son likes them without chocolate. (Sometimes I just don't understand guys.) I think these are awesome with a cup of coffee. Or maybe I just like them so much I even eat them for breakfast.

Chocolate Dunked Shortbread


Ingredients:
3/4 lb butter (room temp soft)
1 C sugar
1 tsp vanilla
1/4 tsp salt
3 1/2 C flour

4 Hersey bars






Directions:
1. Preheat oven to 350.
2. In standing mixer, cream the butter and sugar. Add vanilla and salt.
3. Put mixer on low speed and slowly add the flour. Mix until dough forms.
4. On a floured surface, form dough into a disk about 1 inch thick. Then wrap in plastic and chill for 30 mintes.
5. Roll dough to 1/2 inch thick. Cut out cookies 3 x 1 inch.
6. Bake 20 minutes or until bottom is light brown. Cool completely.
7. Crumble chocolate and melt in a bowl in the microwave. Dip cookies as desired.


Hints and Help:
These cookies stay pretty true to size so cut them into any desired shape and size. Beware, the smaller the cookie, the faster it bakes.
