Day 2 of the Dear Santasaurus Blog Tour
My oldest daughter's favorite cake is red velvet. I made the Red Velvet Crackle Cookies for her. She says she still likes the cake better, but in the cookie's defense, these were gobbled up with a day.
Red Velvet Crackle Cookie
(Don't let the name fool you. These cookies are very soft and chewy.)Ingredients:
6 tbsp butter, melted
1 C powdered sugar, plus extra
1 tsp corn starch
1 box red velvet cake mix
2 eggs
1 tsp lemon juice
1/2 C flour
Directions:
1. Preheat oven to 375.
2. Mix corn starch and powdered sugar in a bowl. Then add (cooled) butter, cake mix, eggs, and lemon juice. Mix with a wooden spoon and slowly add the flour. Eventually, use your hands.
3. Form into large balls and roll in extra powdered sugar.
4. Place on ungreased cookie sheet and bake 9-11 minutes.
Hints and help:
This dough is very, very sticky until you add the flour. Also, it will stain your hands red.
